Polytherms of physical properties of the multicomponent commercial melts are studied. The peculiarities such as anomalies, knees and hysteresis enable to analyze the structural variations in the melt under heating and cooling. The methods of forming uniform, stable and equilibrium structure can be elaborated by using these peculiarities. High speed tool (R6M5), manganese (110G13L), bearing (ShKh15) and stainless (Kh18N10T) steels as well as ZhS6U heat resistant nickel alloy and SCh18-SCh20 cast irons are considered.
