Treatment of raw milk in the hermetic polystyrene package was carried out by the impulse electron beam with doses up to 10 kGr on the UELR-10-10C plant. It was shown that effects of ionizing radiation does not lead to a noticeable activation of the processes of peroxide oxidation of milk lipids. Content of malonic dialdehyde, the main final product of the peroxide oxidation of lipids after milk treatment with impulse electron beam does not exceed its concentration in milk products subjected to a traditional thermal treatment. It was found that keepability of milk catalase is higher than in the case of heat treatment. The results obtained can serve as a basis for the choice of the optimum regimes for the radiation treatment of milk.
