Alterations of supermolecular structure (liquid crystalline textures and intermolecular free volumes) of various phases of lecithin-water systems on ion modification by calcium chloride have been observed by structural morphometry, optical refractometry and electron-positron annihilation methods at 295 K. We assume that the significant changes of supermolecular structure are due to the binding effects of Ca2+ cations.
